The Taco Shop, Amsterdam

I have heard ALOT about this place — and finally last night — I had my first Taco Shop experience. It probably won’t be my last.
I had the “Vegetarian Smothered Burrito” — and boy was it ever smothered. Refried beans and rice wrapped up and slothered in a generous dose of sauce and cheese. After eating this I really needed a nap — but it was worth every bite. I can smell a weekly ritual coming on. And a lot of extra laps around the Vondel Park

I highly recommend this place for anyone who loves authentic Tex-Mex or misses the taste of home.

So, in response to the question below (which I have often thought of myself), I think my best strategy for eating healthy in a busy world is to plan ahead. If I can make a pot of soup or refried beans or a salad at the beginning of the week, I know it will help me stay healthy when I get really busy during the middle of the week. If I’m exhausted and still have to make dinner, I tend to rely on my favorite fast food - homemade popcorn. But if I plan ahead and always have healthy meals and snacks on hand, then it’s no trouble at all.
What about you?
P.S. That taco store looks like it’s worth a trip to Amsterdam all on its own.
Haha, I write to ask people their healthy habbits — and then I post a 1,000+ calorie plate of cheezy goodness. Haha. Oh teh irony
The only thing that I’m doing right now is juicing fruits and veggies every morning to be sure that I get them all. The rest of the day is a major down slide… I have no time to prepare a decent meal!!! So I eat out or stuff my face with peanut butter laden crackers
PS: the taco shop is so totally worth the trip to Amsterdam!!!
