Yellow Rice and Red Beets

Brightly coloured and contrasty food makes me smile. My Mother-in-Law made this special for me, since everyone else was being served things that I don’t eat. I really appreciated that, because I do not expect people to cater to my needs.
The plate was piled high with freshly boiled heirloom beets grown locally on Salt Spring Island, yellow rice prepared with tumeric, cumin and coriander in the rice steamer and served with sweet pickles.
