White Bean and Red Pepper Burger

These easy-to-make bean burgers have a mild taste with a hint of red bell peppers.
Fry an onion, a clove of crushed garlic and 1/2 a diced red pepper on medium heat until soft. Meanwhile wizz 2 cups of cooked white beans in a food processor until they are smooth but still with some chunks for texture. Place the bean mixture in a bowl and add 3/4 cup cooked (basmati) rice, the onion/pepper mixture, a large pinch of dried thyme and oregano plus salt and pepper to taste.
Mix everything together with your hands. If it is too wet, add some breadcrumbs to the mixture. Form into 4 patties and place on a plate lightly dusted with breadcrumbs. Flip the burgers to lightly coat the other side of the patties.
Fry the burgers in 2 tbsp olive oil for or bake the patties on both sides until done.
