Tofu “Babi Ketjap”

Babi Ketjap is an Indonesian soy-pork dish. I found a recipe, again, in the latest Aller Hande that I completely veganized and bastardized. The result was a very soft textured tofu with a tangy taste that would go great with rice.
Ingredients
1 block tofu, drained and pressed
2 tablespoons oil
1 teaspoon ground koriander
1 teaspoon ground cumin
1 teaspoon ginger powder
1 clove garlic, sliced thinly
2 tablespoons tomato paste
3 tablespoons ketjap manis
1 teaspoon sambal oelek (optional)
1 tablespoon apple cider vinegar
1 large onion, diced
Directions
- Using a fork, tear the tofu into chunks.
- In a bowl, mix all of the ingredients together except the onion.
- Marinate the tofu chunks over night or all day.
- Heat some more oil in a wok on high heat.
- Fry the onions until they are beginning to brown.
- Add the tofu and the marinade. Cook for 6-8 minutes on high heat. Add a few splashed of water or vegetable broth if it is starting to stick tot he pan.
- Add salt and pepper to taste. Serve with rice.
