the Happy Vegetarian

This was a delicious and satisfying soup from The New Vegan Cookbook: Innovative Vegetarian Recipes Free of Dairy, Eggs, and Cholesterol. We made it from the Dutch verison of the cookbook so I’m not sure what the name of the recipe would be in English. Nonetheless, it’s well worth making. Actually a lot of recipes in this book are amazing — plus it has great tips on what to do with beans and grains.
