Stuffed Peppers with Couscous Salad

This meal is simple to whip up when you have zero motivation to cook and a few fresh ingredients on hand. Serves 4.
Ingredients
1 cup couscous
2 cups hot vegetable broth or water
3 ripe tomatoes, de-seeded and diced
4 spring onions chopped in thin rings
large handful parsley, chopped
1 green chili pepper, de-seeded and diced
1 lemon, squeezed
4 tablespoons olive oil
salt and pepper to taste
4 red bell peppers, sliced lengthwise and de-seeded
Directions
- Place the couscous in a large bowl, add the hot broth, cover and let sit for 15 minutes
- Add all of the ingredients to the bowl (except the red pepper) and gently mix together
- Stuff the peppers with the couscous salad and grill the peppers for 7-10 minutes
Variations
For contrast, you could add a handful of chopped black olives to the couscous salad. If you eat cheese, you could also add some blocks of feta.
