Stuffed Peppers with Couscous Salad

This meal is simple to whip up when you have zero motivation to cook and a few fresh ingredients on hand. Serves 4.

Ingredients
1 cup couscous
2 cups hot vegetable broth or water
3 ripe tomatoes, de-seeded and diced
4 spring onions chopped in thin rings
large handful parsley, chopped
1 green chili pepper, de-seeded and diced
1 lemon, squeezed
4 tablespoons olive oil
salt and pepper to taste
4 red bell peppers, sliced lengthwise and de-seeded

Directions

  1. Place the couscous in a large bowl, add the hot broth, cover and let sit for 15 minutes
  2. Add all of the ingredients to the bowl (except the red pepper) and gently mix together
  3. Stuff the peppers with the couscous salad and grill the peppers for 7-10 minutes

Variations
For contrast, you could add a handful of chopped black olives to the couscous salad. If you eat cheese, you could also add some blocks of feta.
