Scrumptious Spelt Pizza Dough

I’m a big sucker for pizza.
But… I’m also trying to cut back on the white flour and pounds of melted cheese. So i’ve come up with a super simple pizza dough that has 1/3 spelt flour, that is yummy and that is not as heavy as a brick:
2 cups of white flour
1 cup of spelt flour
1 package of dry yeast
1 tablespoon sugar
1 teaspoon salt
1 cup warm water
olive oil
Mix the dry ingredients in a bowl. Add the warm water and a glug of olive oil. Mix. Toss the mass onto your counter and knead for about 10 minutes.
Form the dough into a ball, roll it around a large bowl slightly greesed with olive oil. Cover with plastic wrap or a damp towel. Let rise in a warm place for an hour.
Punch the dough down and then stretch it out onto your oiled pizza pan(s)
Here are 2 of my new favourite pizza combinations that don’t require a pound of greasy melted cheese:
1. Tomato, feta, red onion and basil
2. Tomato, soft goat cheese, red onions, black olives, thyme and pine nuts
Really cool tip: After you oil your pizza pans, add a dash of polenta (cornmeal) to the bottoms. Then place your dough on top like normal. It will give the pizza bottoms a bit of crunch.
Bake pizza in oven for about 25 minutes at 225 celcius.
