Marrakech Stew

Marrakech or Marrakesh, known as the “Red City” is a city in southwestern Morocco, near the foothills of the Atlas Mountains.
This stew is yet another spot-on recipe from re-Fresh; combining the sweetness of coconut milk and raisins to earthy spices, fresh vegetables and chickpeas.

I’ve been eyeing that recipe from re-Fresh ever since I bought the book. Actually, so many recipes in that book look so very, very good but I’ve only tried about three so far. Glad to hear that stew worked out well and thanks for reminding me of it!
Every recipe I try from that book is spot on. Seriously. I highly recommend the simple rice bowl and the soba noodle recipe. Oh, the fresh burgers are sooOOoooo gooOOOoood too.

I’m a repeat offender of the Marrakesh stew from Ruth Tal’s Refresh cookbook! In fact, we’re having it for dinner tonight with some left over tempeh instead of the chickpeas. It’s definitely one of my favourites! We also like the dragon rice bowl and green goddess.
