L’arte D’arrangiarsi (the art of making something out of nothing)

Some of the BEST food in the world is made from a few simple ingredients tossed together to create a delicious meal from almost nothing
What are your favorite meals made from a few things on hand?
Simple Vegetarian Lentil and Potato Soup
Heat 1 tablespoon of olive oil in a soup pan and fry 1 chopped onion, 1 chopped carrot, 2 chopped stalks of celery and 2 medium peeled and chopped potatoes. Add 1/2 cup of brown uncooked lentils, 4 cups of vegetable stock and 1 bay leaf. Cover and bring to a boil. Turn down the heat and let everything simmer for 30-35 minutes until everything is soft. Serve with some crusty (aka: stale) bread for dipping.
Enough for 2 big bowls — or 1 large feast if you want to hog everything for yourself
