Grilled Peppers with Haloumi and Lemon/Chili Dressing

This was my first time preparing a dish with haloumi — it was awesome. If you like feta, then you will LOVE haloumi. It’s perfect for when you want a cheese that keeps it’s shape and texture when heated, such as when grilling or bbq’ing. I can’t wait to experiment more with it. More on Haloumi >>
This recipe came from BBC’s Olive magazine, July issue. We served it with a mix of white and wild rice — plus a glass of nice white wine
