the Happy Vegetarian

My boyfriend just got back from a crazy kayak expedition in Tofino; and one the people in the class suggested buying the vegan cookbook: ExtraVeganZa: Original Recipes from Phoenix Organic Farm. So, of course, he did and he brought it back as a present for me. Awww, how sweet.

So, this is the first thing that we tried out of the book — and it was great. Piled with vegetables and slothered in creamy mashed potatoes — this is a real stick-to-your-ribs kind of meal.
