Dairy-Free Strawberry Banana Muffins

So we’re going kayaking and camping for a few days around beautiful Salt Spring Island — and Johan put me in charge of the whole food/kitchen operations. After making a plan of what to bring and eat for 4 days — it dawned upon me to make a batch of somewhat “healthy” muffins to pack as a quick and yummy snack along the way.
Here is the recipe for dairy-free strawberry banana muffins:
Ingredients:
1 cup whole wheat flour
3/4 cup white flour
1/2 cup sugar
large dash cinnamon
1 grated lemon rind
2 teaspoons baking powder
1/2 teaspoon baking soda
dash of salt
1 cup soy milk
1 teaspoon vanilla extract
2 tablespoons canola oil
1/4 cup maple syrup
2 mashed very ripe bananas
2/3 cup chopped fresh strawberries
Directions:
Line a muffin tray with muffin cups. Mix all of the dry ingredients in one bowl. Mix all of the wet ingredients including the fruit in another bowl. Gently mix the dry with the wet ingredients being sure not to over mix. Fill the muffin liners with the batter and bake at 350 degrees for 20 minutes.
