
Happiness is enjoying tea, scones and yummy little cakes over good conversation with friends.
This is the second time that I’ve been to the Bakkerswinkel — once in Westerpark and once in the center of Amsterdam — and I’m completely hooked. Their scones and clotted cream are amazing — plus they have this lemony custard that is to die for.
This was really a perfect way to spend a Sunday afternoon.

One of my good friends, who is the epitome of German efficiency, once pondered living off of blended meals to save time. He even has a complete step-by-step process book that I’m envious of — which maps out his life and his business.
If he ever had to step out for a while, you could literally pick up this book and run his life for him
Anyhow, back to the blending. It’s NOT such a crazy idea…
I’ve been trying to come up with meals for one lately, which if you read my last post is becoming a drama.
a) I have no MOTIVATION to cook for one
b) I have no TIME to cook for one
c) Plus, what CAN you cook for one?
So, I’m seriously contemplating a liquid diet for a while, just for the sheer convenience of it.
Any ideas?

The Happy Vegetarian has been missing in action lately. She’s too embarrassed to post what she’s really been eating for the last few weeks: take-out, microwave meals, bowls of popcorn… and when she’s feeling particularly lazy — large spoonfuls of peanut butter straight out of the jar.
Luckily, she has found that the Bagels and Beans down the road serves a gigantic cappuccino made with soy milk to fuel her energy. Certainly something hard to find in the Netherlands. Plus a wicked multi-grain bagel loaded with avocado and tomatoes served with cream cheese on the side, if you so desire.

Thursday is “Girl’s Drinks Night” in Utrecht. It’s a thing me and a friend do about once a month to catch up and gossip. It also conveniently coincides with shopping night
Usually when we settle down into one of the many cafés along the canal, I don’t expect much to choose from on the menu. I usually have a choice between a boring salad or an uninspired pasta.
But Toque Toque knocked my socks off.
They offer a great choice for veggie’s and omni’s alike. They even have tofu on the menu, which is far and few between in the Netherlands. This place has a warm and slightly trendy ambiance: the perfect place for a meal, wine and plenty of GOSSIP!

As you can tell by my posts recently, I’ve barely had time to eat at home.
Pomodori is a great little place in the centre of Baarn. With many delicious vegetarian choices on the menu: from soups to quiches to sandwiches that will make you want to lick your plate clean.
And the polenta? It’s to die for

Knock the socks off of your dinner guests when you serve them this little treat. Luckily, it’s very easy to prepare.
Bake your favourite chocolate cake and let cool. Cut out circles with a cookie cutter or a glass. Place two on top of each other with a layer of frosting between. Top off the mini-cakes with another layer of frosting. Place a simple chocolate decoration on top and serve!
Easy eh?
