Asian Noodle Soup with Grilled Tofu

Even thought this soup is adapted from a grocery store recipe, it is surprisingly delicious and satisfying.
Bring a litre of vegetable stock and some noodles to a boil. Add the zest of a lime and a chopped up leek. Let it softly boil for about 5 minutes. Add some chopped up red bell-peppers and celery. Let it softly boil for about another 3 minutes.
Brush some olive oil on tofu slices (we used tofu marinated in tamari sauce) and grill on both sides until they have nice grill marks.
Place the soup in bowls, add some bean sprouts, green onions and pile the tofu on top! Add some pepper and tamari sauce to taste.
